Preparation
Ingredients
- • 50 grams vanilla protein powder
- • 100 grams oat flour
- • 50 grams almond powder
- • 1 tablespoon poppy seeds
- • 1 teaspoon baking powder
- • 1/2 teaspoon baking soda
- • 2 eggs
- • 400 grams Greek yogurt or skyr (vegetable yogurt for lactose-free versions)
- • 60 grams honey (maple syrup for vegan version)
- • juice of one lemon
- • zest of one lemon
Method
- 1.Preheat oven to 170°C
- 2.Combine the oat flour, almond powder, protein, yeast, baking soda and poppy seeds
- 3.In a separate bowl, mix the eggs, yogurt, honey, lemon juice and zest
- 4.Mix dry ingredients with liquid ingredients
- 5.Pour batter into muffin cups
- 6.Cook for about 20 minutes
- 7.Mix lemon juice and honey
- 8.Pour a little syrup over the warm muffins
- 9.Cool before eating
