Lemon poppy seed protein muffins

Preparation

Ingredients

  • 50 grams vanilla protein powder
  • 100 grams oat flour
  • 50 grams almond powder
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 400 grams Greek yogurt or skyr (vegetable yogurt for lactose-free versions)
  • 60 grams honey (maple syrup for vegan version)
  • juice of one lemon
  • zest of one lemon

Method

  1. 1.Preheat oven to 170°C
  2. 2.Combine the oat flour, almond powder, protein, yeast, baking soda and poppy seeds
  3. 3.In a separate bowl, mix the eggs, yogurt, honey, lemon juice and zest
  4. 4.Mix dry ingredients with liquid ingredients
  5. 5.Pour batter into muffin cups
  6. 6.Cook for about 20 minutes
  7. 7.Mix lemon juice and honey
  8. 8.Pour a little syrup over the warm muffins
  9. 9.Cool before eating

For the lemon syrup

  • juice of one lemon
