Preparation
Ingredients
- • 1 kg beef or chicken bones
- • 2 liters of water
- • 1 tablespoon cider vinegar
- • 2 carrots
- • 1 onion
- • 2 onions
- • 2 stalks celery
- • 2 garlic cloves
- • salt and pepper
- • herbs of your choice thyme bay leaves parsley
Method
- 1.Place the bones in a large saucepan or casserole dish
- 2.Add water, cider vinegar, vegetables and herbs
- 3.Bring to the boil, then lower the heat
- 4.Simmer very gently for several hours (4 hours minimum to 12 hours ideal)
- 5.Remove foam from surface if necessary
- 6.Strain broth to remove bones and vegetables
- 7.Keep refrigerated or freeze in portions
