Preparation

Ingredients

  • 1 kg beef or chicken bones
  • 2 liters of water
  • 1 tablespoon cider vinegar
  • 2 carrots
  • 1 onion
  • 2 onions
  • 2 stalks celery
  • 2 garlic cloves
  • salt and pepper
  • herbs of your choice thyme bay leaves parsley

Method

  1. 1.Place the bones in a large saucepan or casserole dish
  2. 2.Add water, cider vinegar, vegetables and herbs
  3. 3.Bring to the boil, then lower the heat
  4. 4.Simmer very gently for several hours (4 hours minimum to 12 hours ideal)
  5. 5.Remove foam from surface if necessary
  6. 6.Strain broth to remove bones and vegetables
  7. 7.Keep refrigerated or freeze in portions
