- • 1 slice wholemeal or sourdough bread
- • 1/2 avocado
- • 1 egg
- • 60 grams smoked or cooked salmon
- • 2 tablespoons cottage cheese
- • 1 tablespoon mixed seeds chia seeds pumpkin seeds or sesame seeds
- • a few cherry tomatoes
- • 1 teaspoon lemon juice
- • 1 pinch salt and pepper
Method
- 1.Toast the slice of bread
- 2.Mash the avocado with the lemon juice, salt and pepper
- 3.Spread avocado on toast
- 4.Add cottage cheese
- 5.Add salmon
- 6.Cook the egg, then add it to the toast
- 7.Chop the cherry tomatoes and add
- 8.Add seeds on top
- 9.Serve immediately
